We travel with our tandoor. There are no pre-made sauces in our catering operation. No jarred masalas. No simplified versions of dishes designed to survive a two-hour transport window. Every dish prepared for your event is built from the ground up on the day of your event, by chefs who have been cooking this food their entire lives.

The spices we use are imported directly from India , not as generic export blends, but as specific ingredients for specific purposes. The cardamom in the desserts is not the same as the cardamom in the rice. The Kashmiri chiles that give certain dishes their deep red color and gentle heat cannot be replaced with standard chile powder without losing the character of the dish entirely. These are the details that separate food that tastes authentic from food that merely resembles it.

The Pav Bhaji Station brings one of Mumbai's most iconic street dishes to your event in its most honest form: a chef working a high-heat griddle live, pressing and folding spiced vegetables as guests watch, serving each portion directly onto buttered toasted bread at the exact moment of cooking. The sound, the aroma, the visual of the chef at work , it is food as entertainment without trying to be, which is always the best kind.

The Pani Puri Stand is perhaps the most social element of the entire evening. Each crispy sphere is filled on the spot — chickpeas, spiced potato, cold tamarind and mint water , and placed directly into the guest's hand.
